Chicken Sate with Spicy Peanut Dipping Sauce

Ingredients

  • 1/2 cup Emeril’s® chicken stock
  • 1/2 cup lite coconut milk
  • 2 tbsp low-sodium soy sauce
  • 1 shallot, sliced thin
  • 1 clove garlic, minced
  • 1 1/2 Thai fish sauce
  • 1 tsp brown
  • 2 tbsp Grandma’s® Molasse
  • 1/2 tsp lime zest
  • 1 tbsp fresh minced ginger
  • 1 lb skinless, boneless chicken tenders
  • 8 (8˝) bamboo skewers, soaked for 20 minutes

Directions

Marinade In a medium bowl, whisk together all marinade ingredients. Add chicken and marinate for 1 hour in refrigerator. Remove chicken and discard marinade. Spray a nonstick grill pan with cooking spray and preheat over a medium-high flame. While pan is heating, thread chicken onto skewers. Grill 2–3 minutes per side, until meat is cooked through. Serve chicken skewers with Peanut Dipping Sauce. Serves 4 (2 skewers and 2 Tbsp peanut sauce per serving)

    The measurement for the fish sauce in this recipe should be in teaspoons. If you have used fish sauce, also known as Patis in Asian grocery stores, you know it has a very bold flavor. A little goes a long way!
